Red hot in popularity, Mexico’s favorite cocktail has displaced the Margarita for cooling the pallet or washing down a nice meal.  After catching word in a few magazines and even having fans on our FB site mention the drink, I knew this one had to make this list.  I made a few in the heart of winter, and so  drastically did my mood and taste buds  dance, that I knew this was going to be a new “go to” in my arsenal.  Almost a two drink cocktail, this tart and refreshing tall drink of recharge will ring your bell as the sun sets on a cool early spring evening.  Find pink grapefruit if you can.

 

Here we go –

Rim a highball glass with grapefruit juice, then rim again in kosher or large grain sea salt.  Combine 1/4 cup, or 2 1/2 oz fresh grapefruit juice, a tablespoon of fresh lime juice and a teaspoon of sugar in a separate glass.  Stir till mixed and sugar is dissolved.  Pour mixture into ice-filled, salt-rimmed highball and add 2 oz tequila or mescal.  Stir then top with cold club soda.  Add grapefruit wedge to salty rim as garnish.
